Garlic & Lime Chicken Skewers 



  • 12 lbs. boneless, skinless chicken breast

  • 9 cups Pace Picante Sauce – Mild

  • ¾ cup vegetable oil

  • ¾ cup lime juice

  • 1 tbsp. garlic powder

  • 2 tbsp. cumin




  1. Place the chicken between 2 pieces of plastic wrap. Pound the chicken to 1/2-inch thickness, using a meat mallet or a rolling pin. Cut lengthwise into 1-inch strips.

  2. Stir the Pace® Picante sauce, oil, lime juice, garlic powder and cumin in a large bowl. Add the chicken and toss to coat.

  3. Thread the chicken accordion-style on skewers. Lightly oil the grill rack and heat the grill to medium. Grill for 10 minutes or until the chicken is cooked through, turning and brushing often with the picante sauce mixture. Discard any remaining picante sauce mixture.

  4. Cook the chicken to 165 °F.

  5. Hold for hot service at 140 °F.
